Our Chef

Begoña Pérez-Porrúa Suárez is a prominent Mexican chef with a degree in Business Administration from the Universidad Iberoamericana. Her culinary journey began with specialization at the Ritz Escoffier school, where she had the opportunity to interact with renowned chefs such as Mauro Maccioni.

In 2002, she opened her first café, marking the start of her culinary career. Her focus on offering unique food proposals and satisfying diverse palates led her to design spaces with suitable atmospheres to enjoy the moment. Additionally, she excelled in areas such as bar management, processes, staff treatment, and excellent service.

In 2005, she ventured into Mexican gastronomy as a student at the school of chefs Yuri de Gortari and Edmundo Escamilla, where she continues to learn new techniques and trends. In 2008, she fulfilled her dream of opening her own restaurant, El Mayor, committed not only to providing high-quality dishes but also to expanding the culture of traditional Mexican cuisine, recognized as intangible heritage.

Over the years, she has worked with renowned chefs and maintained a special connection to local roots, foods, and ingredients, reflecting this in every recipe at her restaurants. Her deep knowledge of Mexican products has led her to commit to consuming local ingredients, contributing to the quality of inputs and supporting producers directly.

Currently, Begoña Pérez-Porrúa Suárez is the founder and director of various establishments, including Quesadillería, La Frapp, El Mayor, and Los Pérez Comal & Carbón, all located in the Historic Center and the capital's Zócalo.
